National Council of Teachers of Mathematics (NCTM) Principles and Standards. This resource gives a good overview of mathematics teaching/learning from a developmental perspective. It is also particularly good for raising awareness of the breadth of mathematics beyond simply numerical manipulation.

Illuminations. This is a huge collection of online math-related "applets" they are correlated to math levels from early elementary on up.

Project 2061. This is an educational improvement project of the American Association for the Advancement of Science (AAAS). The site has a lot of good overview material on science and mathematics literacy, textbook evaluations, etc.
(2061 is the date of the next return of Halley's Comet.)
